Every summer for several generations, the Poncet family has summered with its cattle at the foot of the mount Suchet, on the Poyettaz mountain pasture. This small chalet is situated in a bucolic setting, between forests, pastures and the famous military defense toblerones that shape the landscape of the Jura vaudois.
Every Wednesday and two Saturdays a month from June to September, Etienne Poncet invites you to discover how Gruyère d’Alpage PDO is made. Meeting at 7.45am at the mountain pasture, you’ll be welcomed as soon as the milk has passed through the vat. Indeed, after the morning milking, the milk is directly processed, but Etienne will probably explain it better than we can 😉
After a demonstration and explanation of the production process and life on the Poyettaz mountain pasture, you can share a convivial moment over a country-style breakfast. On your way out, you can buy cheese if you wish.
Finally, after breakfast at 10:00 a.m., we suggest walking to the Suchet to admire the view. And why not eat at the Chalet du Suchet at the same time?

Pastry workshop © La Fabrique
A pastry or bakery workshop followed by a fondue, that’s our summer plan.
In Champagne, learn the subtleties of baking and pastry-making at a workshop coached by La Fabrique’s experienced bakers and pastry chefs.
On Fridays July 19 and August 2 at 4:00 pm, a bakery workshop will enable you to make different kinds of flute. After a good hour’s workshop, take your creations and a fondue kit for a picnic in the Champagne region. Between the vineyards and the shores of Lake Neuchâtel, the region is full of places to spend a pleasant moment outdoors.
Saturdays, July 20 and August 3, at 2:00 p.m., time for sweet treats!
On the first date, make a mille-feuilles, and at the beginning of August, the workshop will enable you to make a Paris-Brest. Pastry workshops last 2 hours.

As part of the Mets la main à la pâte experiment , the Association pour le Développement du Nord vaudois is offering a portable fondue kit at a preferential price. With this, 400 grams of cheese, 50cl of white wine from Eric Schöpfer of Domaine Le Champagnoux and a pound of bread.
This kit is ideal for accompanying your hikes and gourmet getaways, and is easy to set up and dismantle. Tested and approved by us 😉
Alice Perdriolle and Lucie Theurillat offer you an exceptional experience in the heart of the AOC Bonvillars vineyards. Attached to their respective terroirs and professions, these two young women have combined their universes to create an unusual gourmet tour.
Intrigued? We explain the concept:
Meet at 10:00 am at Domaine de Gourmandaz in Corcelles-près-Concise. After meeting Alice and Lucie and the other participants, Lucie will explain the various basic sketching techniques.
After this short theoretical introduction, you’ll set off to discover the most beautiful spots in the Bonvillars wine region. At the various stops, you’ll draw your sketches with Lucie’s expert advice on how to achieve the best possible lines.
To accompany your learning experience, Alice will introduce you to different wines from the Domaine and the specific characteristics of the Bonvillars terroir. And to add a gourmet touch, an aperitif dinner featuring local produce will accompany your sketches and the tasting.
Finally, you’ll return to the Domaine de Gourmandaz around 2:00 pm, where the activity will come to an end.

On the last Sunday in September, the Bloesch family of Domaine La Boulaz welcomes you for an exclusive day in the heart of the vineyard. Arnaud and Léonard, who are about to take over the reins of the Domaine from their father Jacques, open the doors of their world to you in this, the Domaine’s 100th anniversary year.
So, on September 29, meet us at 10:00 am in Bonvillars for a day of hands-on experience of the grape harvest. After arriving on site, you’ll go straight into the vineyards to harvest the grapes for about an hour, while the Bloesch family explains the winemaking profession and the local terroir. During this escapade in the heart of the vineyard, you’ll taste the Domaine’s wines and enjoy an aperitif in an exceptional setting overlooking Lake Neuchâtel.
Finally, you’ll head to the cellar for a tour and explanations of the history of the estate, the processes involved and the job of the wine-maker.
