Olivier Chautems is both a farmer and wine-grower, and is based at Champvent. The cultivates 7 different varieties on a calcareous soil in an estate covering 18,000 m2.
The estate’s speciality is the “Soleil de Minuit” which is vinified from petit salvagnin ”a selection made from low-yielding pinot noir” which was introduced into the Côtes de l’Orbe in the16th century, and is noted for its great aromatic complexity and silky tannins.
